A bottle of 2007 Gevrey Chambertin Premier Cru Les Cazetiers, from Vallet Frères. The Cazetiers vineyard is situated on a south east facing slope, near Clos Saint Jacques.

Founded in 1864 by Pierre Bourée, Vallet Frères is now in the hands of the fourth generation of the family, Bernard and Jean-Christophe Vallet, and run along very traditional lines. Only manure has been used to fertilise the vines for the last half century, with grapes crushed by foot in the winery, and naturally fermented without the addition of yeasts.
