A bottle of 1971 Giovanni Cappelli Vin Santo produced in Panzano, Tuscany.
The tradition of Vin Santo is an old one and there are several theories as to how it came to be named as Holy Wine. One theory holds is that it relates to the timing of the fermentation of Vin Santo grapes around Easter.
