A bottle of Don Zoilo Palo Cortado from a solera established in 1837.
Palo Cortado is a style of sherry which begins life as a Fino protected from oxygen by a thin layer of surface-yeast 'flor', before finishing its life ageing oxidatively, concentrating its flavour and alcohol.
VORS officially stands for 'Vinum Optimum Rare Signatum', though this is often anglicised more simply to 'Very Old Rare Sherry', a categorisation for sherries averaging at least 30 years old average age.
