A 50cl bottle of 1993 Pajzos Tokaji Esszencia.
An intensely sweet wine fermented from the free run juice of individually hand picked berries affected by Botrytis cinerea, or noble rot. Such is the level of sweetness, that the yeasts die off after an extremely slow fermentation, leaving the finished wine with a low ABV of around 3 to 4% and more than 500 grams per litre of residual sugar.
'We finished with a perfect wine, the 1993 Château Pajzos Esszencia from Hungary. It looked like motor oil, but the wine possessed such great acidity that everything was fresh, vibrant, and well-balanced. Marmalade, a liqueur of nuts, fruitcake, plum, and caramelized tropical fruit characteristics are all present in this deep amber-colored wine. Incredibly intoxicating from an aromatic point of view, this vibrant, well-focused, amazing wine proves the greatness of the finest wines of Tokaji. 100 points.'
