A bottle of Cartology Chenin Blanc-Semillon 2016 from Alheit Vineyards in the Western Cape of South Africa.
This is a blend of 89% Chenin Blanc and 11% Semillon harvested from dry grown bush vines most of which are 40 to 50 years of age. This is whole-bunch pressed and matured in cements eggs, clay pots, foudres, and old barrels of various sizes, with fermentation lasting anywhere between 3 weeks and 11 months.
